Chef Peter Tompkins glazes pork ribs in Indonesian sambal cobek sauce and stuffs crispy bitterballen, a cousin of the croquette, with shredded chicken. A drinks list titled “Not Your Oma’s Gin Cocktails” offers XXX Summer Punch, with Damrak Gin, lemon and oak moss-syrup, served from a swing-top glass bottle.
